Perfection in taste

Marcio Laan, born in Ermelo, Holland joined Viewmount House Restaurant in April 2018. He was previously Sous Chef at Bloomkitchenbarn, Weesp, Holland for 3 years prior to relocating to Ireland. He also was Head Chef at La Sirene, Apollo Hotel, Amsterdam, which was included in the top 100 "Best Restaurants" in Holland, 2015.

Marcio's mother was born in Portugal and food being a large part of  Portuguese culture he was drawn into food from an early age. When he finished High School he continued into college, he worked 4 days per week and attended college 1 day. During his 5 years in college he worked in many fine dining restaurants and finished his last year at “Olivio”( 1 Star Michelin ). He was interested in different cuisines which  brought him to "Momo", Amsterdam where he was Head Chef.

His style is classic French with modern techniques. He believes in using local produce and utilising fresh ingredients from the garden. Having being trained in Michelin Star restaurants has rooted in him the importance of training young chefs on the job and allowing them to grow.

Already impressing regulars at VM Restaurant, Marcio is looking forward to changing his menu regularly with in season ingredients.
